Clint Grech
Executive chef
Clint started his career in catering when he was very young due to the influence of his grandfather who owned and operated a very well-known catering establishment in Mellieha. Since he was a child, Clint has seen practically all his family working hands-on in this catering establishment and a passion for this industry developed at a very tender age.
Gabriel Caruana
Head chef
Gabriel’s culinary journey starts from when he was 16 years old, having now honed his craft for half of his lifetime. He has always been fascinated by the world of gastronomy and has looked up to Michelin starred chefs seeking inspiration and motivation from their work.
As a chef his philosophy has been to always enhance the ingredients but never to overshadow; his cooking provides a canvas for the ingredients to shine in a natural way, and what better place to showcase his culinary work than at our Michelin starred de Mondion restaurant.
Stevie Sammut
Restaurant Manager
Stevie’s journey from a diligent junior sommelier to our restaurant manager is nothing short of inspiring. His time in Ireland not only refined his culinary and beverage expertise but also broadened his perspective, bringing fresh ideas, refined techniques, and a global mindset to our team. Most recently, he staged at Jordnær (three Michelin stars) and Aimsir (two Michelin stars), gaining invaluable experience and further elevating the standards he brings to the team.
Stevie’s aim is always to deliver friendly and attentive service, guided by personality, confidence, and knowledge, creating memorable dining experiences for every guest. His dedication and passion for excellence truly set him apart, making him an indispensable asset to our establishment.
Miljan Radonjic
Sommelier
Miljan Radonjic, the sommelier at de Mondion, has over a decade of experience in the hospitality industry. He began his career from modest beginnings, steadily advancing through hard work and a growing passion for service. His journey, particularly in Malta, has been instrumental in developing his deep appreciation for wine.
Recently, Miljan was honoured with The MICHELIN Sommelier Award 2026, a well-deserved recognition of his expertise, dedication, and excellence in wine service.

Looking to organise a memorable event? Impress your guests in a 17th century old dining room with breathtaking views of the island. The de Mondion Restaurant, a one MICHELIN Star is set in the upper floor of The Xara Palace Relais & Chateaux and can take up to 35 guests.

Dinner: Tuesday till Saturday from 19:00 till 21:00
Dietary Requirements
Due to the unique nature and intricacy of our ever-changing menu, we want guests to delight in The de Mondion experience as it was originally envisioned.
It is the responsibility of the lead guest to confirm any dietary requirements. Any specific requirement should be mentioned in “Dietary Requirements”, should we not be advised before hand of any dietaries or accessibility requests that have not already been pre-booked in advance, we may not be able to cater for it on the day.
Reserve a table
Credit/Debit card details are required to confirm the reservation. The final bill will be presented after your meal and will need to be settled then. In the event that you should cancel the booking in its entirety or reduce the numbers within 24 hours prior to your booking, €50 per person will be charged to the card provided. By providing credit/debit card details I do agree & accept all terms and conditions mentioned in this policy.
Kindly note that Children of ages 10 years and above are allowed at the restaurant. Furthermore, dress code is smart casual.
Due to restaurant’s policy, we do not pre-allocate any tables in advance.
